Ingredients

1 large head of fresh broccoli (about 4 cups, chopped)

1 medium onion, diced

2 cloves garlic, minced

4 tablespoons unsalted butter

1/4 cup all-purpose flour

4 cups vegetable or chicken broth

2 cups milk

2 cups sharp cheddar cheese, grated

1 teaspoon Dijon mustard

Salt and pepper, to taste

4 large round bread loaves (sourdough or rustic)

Fresh chives or parsley, chopped (for garnish)

Instructions

Start by preparing the bread bowls: Preheat your oven to 350°F (175°C). Hollow out the center of each bread loaf, creating a bowl, and set the tops aside. Place the bread bowls on a baking sheet.

In a large pot, melt the butter over medium heat. Add the diced onion and sauté for about 5 minutes until translucent.

Stir in the minced garlic and cook for another 1 minute, until fragrant.

Sprinkle the flour over the onion and garlic mixture, stirring constantly for about 2 minutes to create a roux.

Gradually pour in the vegetable or chicken broth, stirring continuously until the mixture thickens and is smooth.

Add the chopped broccoli to the pot and bring the mixture to a simmer. Cook for about 10-15 minutes, or until the broccoli is tender.

Lower the heat and stir in the milk, followed by the grated cheddar cheese and Dijon mustard. Keep stirring until the cheese is completely melted and the soup is creamy.

Season with salt and pepper to taste.

While the soup is finishing, place the bread bowls in the oven for about 5-7 minutes until they are lightly toasted.

Once ready, ladle the creamy broccoli soup into the warm bread bowls. Garnish with freshly chopped chives or parsley, and place the tops back on the bread if desired.

Serve immediately and enjoy every cheesy, broccoli-filled bite!
