Ingredients

1 bag (12 oz) tortilla chips

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1 cup diced salami

1 cup diced prosciutto

1 cup sliced pepperoncini

1/2 cup sliced black olives

1/2 cup cherry tomatoes, halved

1/4 cup red onion, thinly sliced

1/4 cup fresh parsley, chopped

1/2 cup guacamole

1/2 cup sour cream

1/4 cup Dijon mustard

1/4 cup balsamic glaze

1 tablespoon olive oil

Salt and pepper, to taste

Instructions

Preheat Oven: Preheat your oven to 375°F (190°C).

Prepare the Base: Spread the tortilla chips evenly on a large baking sheet, ensuring they cover the surface without overlapping too much.

Layering Cheese: Sprinkle the shredded sharp cheddar cheese evenly over the chips, followed by the mozzarella cheese. Make sure to cover all the chips for an even melt.

Add Charcuterie: Evenly distribute the diced salami and prosciutto over the cheesy chips. Then, scatter the sliced pepperoncini and black olives across the surface.

Bake Nachos: Place the baking sheet in the preheated oven and bake for about 10-12 minutes, or until the cheese is melted and bubbly.

Fresh Veggies: While the nachos are baking, prepare the toppings. In a bowl, combine halved cherry tomatoes, sliced red onion, and chopped parsley. Season with a drizzle of olive oil, salt, and pepper, mixing well.

Add Toppings: Once the nachos are done baking, remove them from the oven and immediately top with the tomato and parsley mixture, allowing for some fresh crunch.

Drizzle: Drizzle the Dijon mustard and balsamic glaze over the nachos for an extra layer of flavor.

Serve with Dips: Serve hot with dollops of guacamole and sour cream on the side for dipping.
