1 cup rolled oats

1/2 cup almond butter (or peanut butter)

1/4 cup honey or maple syrup

1/4 cup finely chopped dried figs

1/4 cup mini dark chocolate chips

1/4 cup chopped nuts (such as walnuts or almonds)

1/4 cup shredded coconut (unsweetened)

1/2 tsp sea salt

1/2 tsp vanilla extract

Optional: 1/4 cup diced salami or prosciutto for a savory twist

Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, chopped dried figs, mini dark chocolate chips, chopped nuts, shredded coconut, and sea salt.

    Stir in Wet Ingredients: In a separate bowl, mix together the almond butter, honey (or maple syrup), and vanilla extract until smooth. If you’re adding diced salami or prosciutto, mix it into the wet ingredients as well.

      Combine Mixtures: Pour the wet mixture into the dry ingredients bowl. Stir everything together until fully combined and a sticky dough forms. If the mixture seems too dry, add an extra splash of honey or a bit more almond butter.

        Form Energy Bites: Using your hands, scoop and roll about tablespoon-sized portions of the mixture into balls. Place them on a parchment-lined baking sheet or plate.
