Caramelized Onion & Cheese Steak Sandwich

Ingredients
  

1 lb (450g) ribeye steak, thinly sliced

2 large onions, thinly sliced

2 tablespoons olive oil

2 tablespoons unsalted butter

Salt and black pepper, to taste

1 tablespoon fresh thyme leaves (optional)

1 cup shredded provolone cheese (or cheese of your choice)

4 ciabatta rolls or hoagie rolls

1 tablespoon Dijon mustard (optional)

Fresh arugula or spinach (for topping)

Instructions
 

Caramelize the Onions:

    - In a large skillet, heat the olive oil and 1 tablespoon of butter over medium heat.

      - Add the thinly sliced onions and season with a pinch of salt. Stir to coat.

        - Cook for about 15-20 minutes, stirring occasionally, until the onions become soft and golden brown. If desired, add thyme halfway through for extra flavor.

          Cook the Steak:

            - Remove the caramelized onions from the pan and set them aside. In the same skillet, add the remaining tablespoon of butter.

              - Increase the heat to high and add the sliced ribeye steak. Season with salt and pepper.

                - Sear the steak for about 2-3 minutes, stirring occasionally until browned but still tender. Remove from heat.

                  Assemble the Sandwiches:

                    - Preheat a panini press or a grill pan over medium-high heat.

                      - While the grill is heating, slice the ciabatta rolls in half. On the bottom half, spread a thin layer of Dijon mustard if using.

                        - Layer with a generous amount of the sautéed steak and top with the caramelized onions. Pile on the shredded provolone cheese.

                          Toast the Sandwich:

                            - Place the top half of the rolls on the sandwiches and brush the outside with olive oil.

                              - Grill the sandwiches in the panini press or on the grill pan for 3-5 minutes or until the cheese is melted and the bread is golden brown.

                                Serve:

                                  - Once toasted, remove the sandwiches from the heat and let them rest for a minute.

                                    - If desired, top with fresh arugula or spinach for a crunchy, peppery finish. Cut in half and serve immediately.
