Ingredients

6 large eggs

1 cup milk (whole or 2%)

1 large onion, thinly sliced

1 cup mushrooms (cremini or button), sliced

2 tablespoons olive oil

2 tablespoons unsalted butter

1 teaspoon fresh thyme leaves

1 cup shredded cheese (cheddar or Gruyère)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Preheat the oven: Preheat your oven to 375°F (190°C).

Caramelize the onions: In a large, oven-safe skillet, heat the olive oil and butter over medium heat. Add the sliced onions and cook, stirring occasionally, until they are golden brown and caramelized, about 15-20 minutes. Season with a pinch of salt to help them soften.

Add mushrooms: Once the onions are caramelized, add the sliced mushrooms to the skillet. Cook for another 5-7 minutes, until the mushrooms are tender and browned. Stir in the fresh thyme and season with pepper.

Prepare the egg mixture: In a bowl, whisk together the eggs and milk until fully combined. Season with salt and pepper to taste.

Combine ingredients: Pour the egg mixture over the caramelized onion and mushroom mixture in the skillet. Gently stir to evenly distribute the onions and mushrooms. Sprinkle the shredded cheese on top.

Cook on stovetop: Cook on the stovetop for about 3-5 minutes until the edges start to set.

Bake the frittata: Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the frittata is puffed and set in the center. A toothpick inserted should come out clean.

Cool and serve: Once done, remove from the oven and let it cool for a few minutes. Garnish with freshly chopped parsley before slicing into wedges and serving warm.
