Ingredients

For the Crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

1 teaspoon vanilla extract

For the Cheesecake Layer:

16 oz (2 packages) cream cheese, softened

¾ cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 tablespoon all-purpose flour

Pinch of salt

For the Caramel Topping:

1 cup caramel sauce (store-bought or homemade)

Sea salt, for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 325°F (160°C). Line an 8x8-inch baking dish with parchment paper, leaving some overhang for easy removal.

Make the Crust: In a mixing bowl, combine the graham cracker crumbs, melted butter, sugar, and vanilla extract. Stir until the mixture resembles wet sand. Pour it into the prepared baking dish and press it down firmly to form an even layer. Bake for 10 minutes, then remove from the oven and let cool slightly.

Prepare the Cheesecake Mixture: In a large mixing bowl, beat the softened cream cheese with granulated sugar using an electric mixer until smooth and creamy. Add in the eggs one at a time, mixing well after each addition. Incorporate the vanilla extract, flour, and a pinch of salt, mixing until just combined. Avoid overmixing.

Assemble the Bars: Pour the cheesecake mixture over the cooled crust, spreading it evenly. Bake in the preheated oven for 25-30 minutes, or until the edges are set but the center is still slightly jiggly. Don't overbake; the cheesecake will firm up as it cools.

Cool Completely: Once baked, remove from the oven and allow to cool at room temperature for about 30 minutes, then transfer to the refrigerator for at least 2 hours or until fully chilled and set.

Add the Caramel Topping: After chilling, drizzle the caramel sauce over the top of the cheesecake layer. If desired, sprinkle a pinch of sea salt over the caramel for a delightful contrast.

Slice and Serve: Using the parchment paper overhang, lift the cheesecake bars out of the dish. Cut into squares or rectangles. Serve chilled, and enjoy the rich flavor of caramel complementing the creamy cheesecake!
