Caprese Pasta Salad with Balsamic Glaze

12 oz (340 g) pasta (bowtie or fusilli works great)

1 cup cherry tomatoes, halved

8 oz (225 g) fresh mozzarella balls, sliced in half

1 cup fresh basil leaves, torn or whole

½ cup red onion, thinly sliced

¼ cup extra virgin olive oil

¼ cup balsamic vinegar

2 tbsp balsamic glaze (store-bought or homemade)

Salt and pepper to taste

Optional: ½ tsp garlic powder or fresh minced garlic for extra flavor

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Vegetables: In a large mixing bowl, combine the halved cherry tomatoes, sliced mozzarella, and red onion. If using, add in the garlic for an extra kick.

      Make the Dressing: In a small bowl, whisk together the extra virgin olive oil, balsamic vinegar, salt, and pepper. Drizzle the dressing over the tomato and mozzarella mixture and gently toss to combine.

        Combine Ingredients: Add the cooked pasta to the vegetable mixture and toss everything together until the pasta is well-coated with the dressing. Gently fold in the fresh basil leaves—if desired, reserve a few for garnish.

          Drizzle with Balsamic Glaze: Just before serving, drizzle the balsamic glaze over the pasta salad for a touch of sweetness and visual appeal.

            Season and Serve: Taste the salad and adjust seasoning with additional salt and pepper if necessary. Serve chilled or at room temperature, garnished with reserved basil leaves.
