Ingredients

8 oz (225g) pasta (tortellini or fusilli for extra shape)

1 cup cherry tomatoes, halved

1 cup fresh mozzarella balls, halved or quartered

1 cup fresh basil leaves, loosely packed

1/4 cup balsamic glaze

1/4 cup extra-virgin olive oil

1 clove garlic, minced

Salt and pepper to taste

1/4 teaspoon red pepper flakes (optional)

1/2 cup pine nuts, toasted (for extra crunch)

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool, then set aside.

Prepare the Dressing: In a small bowl, whisk together the balsamic glaze, olive oil, minced garlic, salt, pepper, and red pepper flakes (if using). Adjust the seasoning according to taste.

Mix the Salad: In a large mixing bowl, combine the cooked pasta, halved cherry tomatoes, mozzarella balls, and fresh basil leaves. Pour the dressing over and toss gently until everything is evenly coated.

Add Pine Nuts: Gently fold in the toasted pine nuts for added crunch.

Chill (Optional): For best flavors, cover and chill the salad in the refrigerator for at least 30 minutes before serving, allowing the ingredients to marry together.

Serve: Give the salad a gentle toss again before serving. Drizzle with a little more balsamic glaze if desired, and enjoy your refreshing Caprese Pasta Salad!
