Cajun Shrimp and Grits Casserole

For the Grits:

1 cup stone-ground grits

4 cups chicken broth

1 cup shredded sharp cheddar cheese

1/2 cup heavy cream

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

For the Cajun Shrimp:

1 pound large shrimp, peeled and deveined

3 tablespoons olive oil

1 bell pepper, diced (red or green)

1 small onion, diced

2 cloves garlic, minced

1 tablespoon Cajun seasoning

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust to taste)

1 tablespoon Worcestershire sauce

1 tablespoon lemon juice

Salt and pepper to taste

2 green onions, sliced (for garnish)

For Topping:

1 cup panko breadcrumbs

2 tablespoons butter, melted

1/2 cup parsley, chopped

Instructions
 

Prepare the Grits:

    In a medium saucepan, bring the chicken broth to a boil. Stir in the stone-ground grits and reduce the heat to low. Cook, stirring often, for about 20-25 minutes or until the grits are thick and creamy. If they get too thick, add more broth or water as needed. Once cooked, stir in the cheddar cheese, heavy cream, garlic powder, onion powder, salt, and pepper. Set aside.

      Cook the Cajun Shrimp:

        In a large skillet, heat the olive oil over medium heat. Add the diced bell pepper, onion, and minced garlic. Sauté until the onion becomes translucent, about 3-5 minutes. Add the shrimp, Cajun seasoning, smoked paprika, cayenne pepper, Worcestershire sauce, and lemon juice to the skillet. Cook until the shrimp are pink and opaque, about 3-4 minutes. Season with additional salt and pepper to taste. Remove from heat and let cool slightly.

          Combine Grits and Shrimp:

            Preheat your oven to 375°F (190°C). In a large mixing bowl, combine the cooked grits and Cajun shrimp mixture, stirring gently to blend.

              Assemble the Casserole:

                Pour the grits and shrimp mixture into a greased 9x13 inch baking dish. In a small bowl, mix the melted butter with panko breadcrumbs and parsley. Sprinkle this mixture evenly over the top of the casserole.

                  Bake:

                    Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the casserole is heated through.

                      Serve:

                        Remove from the oven and let cool for a few minutes before serving. Garnish with additional chopped green onions if desired.
