Cajun Chicken with Creamy Cheesy Grits

2 cloves garlic, minced

1 cup stone-ground grits

4 cups water (or chicken broth for extra flavor)

1 cup heavy cream

1 cup shredded sharp cheddar cheese

2 tablespoons butter

Salt and pepper to taste

½ teaspoon garlic powder

½ teaspoon paprika (optional for a little extra kick)

Instructions
 

Prepare the Chicken:

    - In a bowl, coat the chicken thighs with Cajun seasoning, salt, and pepper. Make sure they are evenly coated.

      - Heat olive oil and butter in a large skillet over medium heat. Once hot, add the chicken thighs.

        - Sear the chicken for about 5-6 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F / 75°C).

          - During the last minute of cooking, add the minced garlic and sauté until fragrant.

            - Remove the chicken from the skillet and drizzle with lemon juice. Cover to keep warm.
