2 cups whole milk

1 cup heavy cream

3/4 cup packed brown sugar

1/4 cup cornstarch

1/4 teaspoon salt

1 teaspoon vanilla extract

2 tablespoons unsalted butter

For the Toffee Topping:

1/2 cup sugar

1/4 cup unsalted butter (cubed)

1/4 cup heavy cream

1/2 teaspoon vanilla extract

A pinch of sea salt

For Serving:

Whipped cream (store-bought or homemade)

Crushed toffee bits

Optional: Mini chocolate chips for garnish

Instructions
 

Make the Pudding:

    - In a medium saucepan, whisk together the whole milk, heavy cream, brown sugar, cornstarch, and salt until smooth.

      - Place the saucepan over medium heat and continuously whisk the mixture until it begins to thicken and bubble (about 5-8 minutes).

        - Once thickened, remove from heat and stir in the vanilla extract and butter until completely melted and combined. Let it cool slightly.

          Prepare the Toffee Topping:

            - In a separate saucepan, combine the sugar and cubed butter over medium heat. Stir continuously until the mixture turns a lovely amber color (about 5-7 minutes). Be careful not to let the sugar burn.

              - Once the desired color is reached, carefully add the heavy cream (it may bubble vigorously) and stir until smooth. Remove from heat and stir in the vanilla extract and sea salt. Allow to cool slightly.

                Assemble the Pudding Cups:

                  - In small dessert cups or mason jars, layer the butterscotch pudding at the bottom

                    - Drizzle a layer of the warm toffee over the pudding, adding as much as you like for sweetness.

                      - Repeat the layers until the cups are filled, leaving some space at the top for whipped cream.

                        Finish the Cups:

                          - Top each cup with a generous dollop of whipped cream.

                              Chill and Serve:
