Ingredients

1 lb ground chicken

1 cup fresh buffalo mozzarella, diced

¼ cup fresh basil, chopped

1 tbsp garlic powder

1 tbsp onion powder

1 tsp salt

½ tsp black pepper

½ cup breadcrumbs (Italian-flavored optional)

1 large egg

½ cup buffalo sauce (plus extra for drizzling)

1 tbsp olive oil (for cooking)

Fresh parsley, for garnish

Instructions

Prepare the Chicken Mixture: In a large mixing bowl, combine the ground chicken, garlic powder, onion powder, salt, black pepper, breadcrumbs, and egg. Mix until just combined but do not overwork the meat.

Incorporate Flavor: Gently fold in the chopped basil and diced buffalo mozzarella into the chicken mixture, being careful not to break the cheese up too much.

Form the Patties: Divide the chicken mixture into 4 equal portions. Take one portion and flatten it in your palm. Place a tablespoon of buffalo sauce at the center, then fold the edges over to encase the sauce completely, shaping it into a patty. Repeat with the remaining portions.

Heat the Pan: In a large skillet, heat the olive oil over medium heat. Ensure the oil is hot before adding the patties.

Cook the Patties: Place the patties in the skillet, leaving space between them. Cook for about 5-6 minutes on one side until golden brown, then flip and cook for another 5-6 minutes, or until the internal temperature reaches 165°F (74°C).

Add Extra Spice: In the last minute of cooking, drizzle a bit of extra buffalo sauce on top of each patty, allowing it to caramelize slightly for added flavor.

Serve: Once cooked, remove the patties from the skillet and allow them to rest for a few minutes. Serve warm, garnished with fresh parsley and extra buffalo sauce on the side for dipping.
