Ingredients

1 lb boneless, skinless chicken breasts, diced

1/2 cup hot sauce (such as Frank's RedHot)

2 tbsp unsalted butter, melted

1 tbsp apple cider vinegar

1/2 tsp garlic powder

1/2 tsp onion powder

Salt and pepper, to taste

1 head of butter lettuce or romaine, leaves separated

1/2 cup crumbled blue cheese (optional)

1/2 cup diced celery

1/4 cup sliced green onions

1/4 cup ranch dressing or blue cheese dressing for drizzling (optional)

Instructions

Cook the Chicken: In a large skillet over medium heat, add the diced chicken breasts. Season them with salt, pepper, garlic powder, and onion powder. Cook for about 5-7 minutes until the chicken is no longer pink and is cooked through, stirring occasionally.

Prepare the Buffalo Sauce: In a separate small bowl, mix together the hot sauce, melted butter, and apple cider vinegar. Once the chicken is cooked, pour this sauce over the chicken in the skillet. Toss to coat the chicken evenly in the sauce and cook for an additional 2-3 minutes, allowing the sauce to thicken slightly.

Assemble the Wraps: Take the lettuce leaves and lay them flat on a clean surface. Spoon a generous amount of the buffalo chicken mixture onto the center of each leaf.

Add Toppings: Top the buffalo chicken with crumbled blue cheese, diced celery, and sliced green onions. Drizzle with ranch or blue cheese dressing, if desired.

Serve: Carefully fold the lettuce over the filling to create a wrap. Enjoy immediately while the chicken is warm and the lettuce crisp!
