Buffalo Chicken Lasagna with a Ranch Twist

1 lb cooked, shredded chicken

1 cup buffalo sauce (more or less to taste)

12 lasagna noodles

2 cups ricotta cheese

2 cups shredded mozzarella cheese

1 cup shredded cheddar cheese

1/2 cup ranch dressing

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried parsley

1/2 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons olive oil (for greasing the pan)

Fresh chopped parsley (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Chicken Mixture: In a large mixing bowl, combine the shredded chicken and buffalo sauce. Stir until the chicken is well coated. Set aside.

      Cook the Lasagna Noodles: Boil the lasagna noodles according to package instructions until al dente, then drain and lay them flat on a clean surface or on parchment paper to cool.

        Make the Cheese Mixture: In another bowl, mix together the ricotta cheese, 1 cup of mozzarella cheese, 1/2 cup of cheddar cheese, ranch dressing, garlic powder, onion powder, parsley, salt, and black pepper until smooth.

          Assemble the Lasagna:

            - Grease a 9x13 inch baking dish with olive oil.

              - Start with a layer of the buffalo chicken mixture on the bottom of the dish.

                - Place 3 lasagna noodles over the chicken mixture.

                  - Spread half of the cheese mixture over the noodles.

                    - Repeat the layers (chicken mixture, noodles, cheese mixture) once more.

                      - Finish with a final layer of noodles, the remaining buffalo chicken mixture, and top with the remaining mozzarella and cheddar cheeses.

                        Bake: Cover the baking dish with aluminum foil (to prevent cheese from burning) and place it in the preheated oven. Bake for 25 minutes, then remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown.

                          Garnish and Serve: Remove from the oven and let it cool for about 10 minutes. Garnish with fresh chopped parsley before slicing and serving.
