2 cups cooked chicken, shredded (can use rotisserie chicken)

1/2 cup buffalo sauce (adjust to taste)

1/2 cup cream cheese, softened

1/2 cup shredded cheddar cheese

1/4 cup green onions, finely chopped

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

10 egg roll wrappers

Vegetable oil for frying

Ranch or blue cheese dressing for serving (optional)

Prepare the Filling: In a medium bowl, combine the shredded chicken, buffalo sauce, cream cheese, shredded cheddar cheese, chopped green onions, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are thoroughly combined, and the mixture is creamy.

    Assemble the Egg Rolls: Lay one egg roll wrapper on a clean, flat surface with a corner facing you (like a diamond shape). Spoon about 2-3 tablespoons of the filling onto the center of the wrapper. Fold the bottom corner over the filling, then fold in the sides, and roll tightly towards the top corner. Seal the edge with a bit of water. Repeat with remaining wrappers and filling.

      Heat the Oil: In a deep skillet or frying pan, heat about 1-2 inches of vegetable oil over medium heat until it reaches 350°F (175°C). You can test if it's ready by dropping a small piece of bread into the oil; it should sizzle and brown within a minute.
