2 boneless, skinless chicken breasts

Salt and pepper, to taste

2 tablespoons olive oil (for cooking)

3 cloves garlic, minced

1 pint cherry tomatoes, halved

1/4 cup fresh basil, chopped

1 tablespoon balsamic vinegar

1 teaspoon dried oregano

12 ounces pasta (penne or fusilli work well)

1/2 cup grated Parmesan cheese

Extra basil leaves, for garnish

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides. In a large skillet over medium heat, add 2 tablespoons of olive oil. Once hot, add the chicken breasts. Cook for about 6-7 minutes per side, or until they are fully cooked and have nice golden-brown marks. Remove from the skillet, let rest for 5 minutes, then slice into strips.

      Make the Bruschetta Mixture: In the same skillet, reduce heat to medium-low. Add the minced garlic and sauté for about 30 seconds until fragrant. Then add the halved cherry tomatoes and cook until they start to soften, about 3-4 minutes.

        Combine Ingredients: Stir in the chopped basil, balsamic vinegar, and dried oregano. Season with salt and pepper to taste. Add the cooked pasta into the skillet, along with a splash of the reserved pasta water to help with the sauce consistency. Toss everything together to combine.

          Add the Chicken: Gently fold in the sliced chicken and sprinkle the grated Parmesan cheese over the top, mixing until everything is well combined and heated through. If the pasta seems dry, add a little more reserved pasta water.
