Ingredients

1 cup (2 sticks) unsalted butter, melted and cooled slightly

1 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

2 teaspoons vanilla extract

1 cup all-purpose flour

1/3 cup unsweetened cocoa powder

1/2 teaspoon baking powder

1/4 teaspoon salt

1 cup dark chocolate chips

1/2 cup chopped walnuts or pecans (optional)

Flaky sea salt for sprinkling (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Mix Wet Ingredients: In a large mixing bowl, whisk together the melted butter, brown sugar, and granulated sugar until well combined. Add in the eggs one at a time, mixing thoroughly after each addition, then stir in the vanilla extract.

Combine Dry Ingredients: In a separate bowl, sift together the flour, cocoa powder, baking powder, and salt. This helps to aerate the mixture and eliminate any cocoa clumps.

Combine Mixtures: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.

Add Chocolate and Nuts: Fold in the dark chocolate chips and nuts (if using). The dough should be thick and slightly sticky.

Scoop Cookies: Using a cookie scoop or tablespoon, scoop out rounded portions of dough and place them onto the prepared baking sheets, leaving about 2 inches of space between each cookie.

Sprinkle Sea Salt: If desired, sprinkle a pinch of flaky sea salt on top of each cookie before baking for an extra flavor boost.

Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are set but the centers still look slightly underbaked. They will continue to set as they cool.

Cool Down: Allow the cookies to cool on the baking sheets for about 5 minutes before transferring them to wire racks to cool completely.

Enjoy: These brownie cookies are best enjoyed fresh, but can be stored in an airtight container for up to a week (if they last that long!).
