1 cup fresh pineapple, diced

1 cup ripe mango, diced

1 cup strawberries, hulled and halved

1 cup kiwi, peeled and sliced

1 cup blueberries

1 banana, sliced

1/4 cup shredded coconut (unsweetened)

Juice of 1 lime

1 tablespoon honey (optional)

Fresh mint leaves for garnish

Prepare the Fruit: Start by washing all of the fruits thoroughly. Hull and halve the strawberries, peel and slice the kiwi, and dice the pineapple and mango. Slice the banana last to prevent browning.

    Mix the Ingredients: In a large mixing bowl, combine the diced pineapple, mango, strawberries, kiwi, blueberries, and banana. Gently toss the fruits together to combine, being careful not to mush the bananas and strawberries.

      Add Coconut and Dressing: Sprinkle the shredded coconut over the mixed fruit. In a small bowl, whisk together the lime juice and honey (if using) until well combined. Pour the dressing over the fruit salad, gently tossing to coat all the pieces evenly.

        Chill and Serve: Let the fruit salad sit for about 10 minutes to allow the flavors to meld. For an extra refreshing touch, chill it in the refrigerator for 20-30 minutes.

          Garnish: Just before serving, garnish with fresh mint leaves for a pop of color and added freshness.
