12 oz bow tie pasta

1 cup cherry tomatoes, halved

1 cup cucumbers, diced

1 cup bell peppers (any color), diced

½ cup red onion, finely chopped

½ cup black olives, sliced

1 cup mozzarella balls (bocconcini) or diced mozzarella

½ cup fresh basil leaves, chopped

½ cup extra virgin olive oil

¼ cup balsamic vinegar

1 teaspoon garlic powder

Salt and pepper, to taste

Grated Parmesan cheese, for serving (optional)

Instructions
 

Cook the Pasta: Begin by bringing a large pot of salted water to a boil. Add the bow tie pasta and cook according to package instructions until al dente (usually around 10-12 minutes). Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Vegetables: While the pasta is cooking, chop the cherry tomatoes, cucumbers, bell peppers, red onion, and slice the black olives. Place all the chopped vegetables into a large mixing bowl.

      Add Pasta to Bowl: Once the pasta has cooled, add it to the bowl of chopped vegetables along with the mozzarella balls and chopped basil leaves. Toss gently to combine.

        Make the Dressing: In a separate bowl, whisk together the olive oil, balsamic vinegar, garlic powder, salt, and pepper until well combined. Taste and adjust seasoning as necessary.

          Combine Everything: Pour the dressing over the pasta and vegetable mixture. Toss everything together until evenly coated with the dressing.

            Chill and Serve: Cover the pasta salad and refrigerate for at least 30 minutes to let the flavors meld. Before serving, give it a gentle toss and sprinkle with grated Parmesan cheese, if desired.
