Blush Tomato Burrata Crumble

1 lb ripe heirloom tomatoes, halved

8 oz burrata cheese, at room temperature

1 cup cherry tomatoes, halved

2 cloves garlic, minced

¼ cup fresh basil leaves, torn

2 tbsp balsamic vinegar

1 tbsp olive oil

1 tsp honey

Salt and pepper, to taste

1 cup panko breadcrumbs

½ cup grated Parmesan cheese

2 tbsp unsalted butter, melted

Extra basil for garnish

Instructions
 

Preheat the Oven: Begin by preheating your oven to 400°F (200°C).

    Prepare the Tomato Mixture: In a mixing bowl, combine the heirloom tomato halves, cherry tomatoes, minced garlic, torn basil leaves, balsamic vinegar, olive oil, honey, and season generously with salt and pepper. Toss everything gently until the tomatoes are evenly coated.

      Roast the Tomatoes: Spread the seasoned tomatoes out in a single layer on a baking sheet and roast in the preheated oven for about 20-25 minutes, until they are blistered and juicy.

        Make the Crumble Topping: While the tomatoes are roasting, prepare the crumble topping. In a separate bowl, combine the panko breadcrumbs, grated Parmesan cheese, and melted butter. Mix until the breadcrumbs are evenly coated and crumbly.

          Combine and Finish: Once the tomatoes are roasted, remove them from the oven and carefully transfer them to a serving dish. Tear the burrata cheese into pieces and scatter it generously over the tomatoes. Sprinkle the panko mixture evenly on top of the burrata.

            Final Bake: Return the dish to the oven and bake for an additional 10-12 minutes, or until the topping is golden and crispy.
