Blueberry Stuffed French Toast

8 slices of thick-cut brioche bread

1 cup fresh blueberries (plus extra for garnish)

8 oz cream cheese, softened

1 tablespoon powdered sugar (plus extra for dusting)

1 teaspoon vanilla extract

3 large eggs

1 cup milk

1 teaspoon ground cinnamon

1 tablespoon butter (for frying)

Maple syrup (for serving)

Instructions
 

In a medium bowl, combine the softened cream cheese, powdered sugar, vanilla extract, and half of the blueberries. Mix until smooth and creamy.

    Spread the cream cheese mixture generously between two slices of brioche bread to create a sandwich. Repeat with the remaining slices of bread.

      In a separate bowl, whisk together the eggs, milk, and ground cinnamon until fully combined.

        Dip each stuffed brioche sandwich into the egg mixture, ensuring both sides are well-coated. Let any excess drip off.

          In a large skillet, heat the butter over medium heat until melted and bubbling.

            Carefully place the stuffed sandwiches in the skillet, cooking for about 3-4 minutes on each side, or until golden brown. You may need to do this in batches to avoid overcrowding the pan.

              Once cooked, transfer the French toast to a serving platter and dust with powdered sugar.

                Top with additional blueberries and serve warm with a generous drizzle of maple syrup.
