2 lbs pork tenderloin

1 cup fresh blackberries

1/2 cup balsamic vinegar

1/4 cup honey

2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

Salt and pepper, to taste

Fresh basil, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Blackberry Sauce: In a medium saucepan over medium heat, combine the blackberries, balsamic vinegar, honey, minced garlic, thyme, and a pinch of salt and pepper. Cook for about 8-10 minutes, stirring occasionally until the blackberries have broken down and the sauce has thickened slightly. Use a fork or potato masher to mashing the blackberries for a smoother consistency. Remove from heat and set aside.

      Prepare the Pork Tenderloin: Season the pork tenderloin on all sides with salt and pepper. Heat olive oil in a large oven-safe skillet over medium-high heat. Once oil is hot, add the pork and sear for about 2-3 minutes per side until nicely browned.

        Glaze the Pork: Pour half of the blackberry sauce over the seared pork, ensuring it's well coated. Reserve the remaining sauce for later.

          Roast in the Oven: Transfer the skillet to the preheated oven. Roast the pork for about 20-25 minutes, or until the internal temperature reaches 145°F (63°C). Baste the pork with the sauce halfway through cooking for extra flavor.

            Rest and Slice: Remove the skillet from the oven, cover the pork with aluminum foil, and let it rest for about 5-10 minutes. This helps retain the juices.

              Serve: Slice the pork tenderloin and drizzle the remaining blackberry balsamic sauce over the top. Garnish with fresh basil, if desired.
