1 cup rice flour

1/4 cup all-purpose flour

1 cup coconut milk

1/2 cup sugar

1 tsp baking powder

1/4 tsp salt

2 large eggs

1/2 cup grated fresh coconut (or desiccated coconut)

1/4 cup melted butter (plus more for greasing)

1/2 cup cheese, sliced (preferably queso de bola or sharp cheddar)

2-3 banana leaves (optional, for lining the mold)

1 tbsp sugar (for sprinkling on top)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). If you've got a charcoal grill, that works great for a more traditional flavor!

    Prepare the Banana Leaves (if using): If you're using banana leaves, briefly heat them over an open flame or in hot water until pliable. Cut them to fit your molds or baking dish, then line the molds with the leaves, allowing the edges to hang over the sides.

      Mix Dry Ingredients: In a large mixing bowl, whisk together the rice flour, all-purpose flour, baking powder, sugar, and salt until well combined.

        Incorporate Wet Ingredients: In another bowl, beat the eggs and then add the coconut milk and melted butter. Mix until fully combined.

          Combine Mixtures: Gradually pour the wet ingredients into the dry ingredients, stirring until you have a smooth batter. Fold in the grated coconut for added texture.

            Prepare the Molds: Grease your molds or baking dish with melted butter. Pour the batter into the molds until they are about 2/3 full.

              Add Toppings: Slightly push cheese slices into the surface of the batter. Sprinkle a tablespoon of sugar over the top of each before baking for a golden crust.

                Bake: Place the molds in the preheated oven and bake for about 25-30 minutes or until a toothpick inserted into the center comes out clean and the surface is golden brown.

                  Cool and Serve: Once done, remove from the oven and let them cool slightly. Carefully remove from the molds, peel away the banana leaves if used, and serve warm. You can top them with additional grated coconut or butter if desired.
