Ingredients

2 cups all-purpose flour

1/2 cup almond flour

1/4 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

6 tablespoons cold unsalted butter, cubed

2/3 cup heavy cream

1 large egg

1 teaspoon pure almond extract

1/4 cup sliced almonds (for topping)

1 tablespoon coarse sugar (for topping)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, almond flour, granulated sugar, baking powder, and salt until well combined.

Cut in the Butter: Add the cubed cold butter into the flour mixture. Use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs with pea-sized pieces of butter remaining.

Combine Wet Ingredients: In a separate bowl, whisk together the heavy cream, egg, and almond extract until thoroughly mixed.

Form the Dough: Pour the wet ingredients into the dry ingredients. Gently fold with a spatula until just combined, being careful not to overmix. If the dough is too crumbly, add a splash of heavy cream until it holds together.

Shape the Scones: Turn the dough out on a lightly floured surface. Pat it into a circle about 1 inch thick. Cut the scones into wedges or use a round cutter to make individual scones.

Add Toppings: Place the shaped scones onto the prepared baking sheet. Sprinkle the tops with sliced almonds and coarse sugar for a lovely finishing touch.

Bake: Bake in the preheated oven for 15-18 minutes or until the scones are golden brown and a toothpick inserted in the center comes out clean.

Cool & Serve: Remove from the oven and allow to cool on the baking sheet for a few minutes before transferring to a wire rack. Serve warm with clotted cream or your favorite jam.
