1 cup mascarpone cheese

1 cup heavy whipping cream

¼ cup powdered sugar

1 teaspoon vanilla extract

2 cups mixed berries (strawberries, blueberries, raspberries)

1 cup crushed ladyfinger cookies or sponge cake

Fresh mint leaves for garnish (optional)

Prepare the Mascarpone Mixture: In a medium bowl, combine the mascarpone cheese, heavy whipping cream, powdered sugar, and vanilla extract. Using an electric mixer, whip the mixture on medium speed until soft peaks form. Be careful not to over-whip. Set aside.

    Prep the Berries: Rinse the mixed berries gently under cool water. Pat them dry with a paper towel. If using strawberries, slice them into thin rounds or halves.

      Assemble the Trifles:

        - Take your serving cups or small glasses and start by adding a layer of crushed ladyfinger cookies or sponge cake at the bottom (about 1-2 tablespoons).

          - Spoon a generous layer of the mascarpone mixture on top of the cookies (about 2 tablespoons).

            - Next, gently add a layer of mixed berries (about ¼ cup). Repeat this layering process until cups are filled, finishing with a layer of mascarpone on top.

              Garnish: For the final touch, add a few whole berries on top of the last mascarpone layer and a sprig of fresh mint if desired.

                Chill: Place the assembled trifle cups in the refrigerator for at least 1 hour before serving to allow the flavors to meld and the layers to set.
