2 tablespoons honey or maple syrup (adjust based on sweetness preference)

1 tablespoon chia seeds

1 ½ cups rolled oats

½ cup almond flour (or any flour of your choice)

1/3 cup coconut oil, melted

¼ cup honey or maple syrup

1 teaspoon vanilla extract

½ teaspoon salt

For the Topping:

½ cup rolled oats

¼ cup chopped nuts (walnuts or almonds)

2 tablespoons almond flour

1 tablespoon coconut oil, melted

1 tablespoon honey or maple syrup

A pinch of cinnamon

Instructions
 

Prepare the Chia Jam:

    - In a medium saucepan over medium heat, combine the mixed berries, honey (or maple syrup), chia seeds, and lemon juice.

      - Cook for about 10 minutes, stirring gently until the berries break down and release their juices.

        - Remove from heat and let it cool while it thickens.

          Make the Crust:

            - Preheat your oven to 350°F (175°C) and line an 8x8 inch baking dish with parchment paper.

              - In a large bowl, mix rolled oats, almond flour, melted coconut oil, honey (or maple syrup), vanilla extract, and salt until well combined.

                - Press half of the mixture firmly into the bottom of the prepared baking dish to form the crust.

                  Assemble the Bars:

                    - Spread the cooled chia jam evenly over the crust.

                      - Sprinkle the remaining crumb mixture over the chia jam layer, pressing lightly to ensure it sticks.

                        Make the Topping:

                          - In a separate small bowl, mix together the topping ingredients: rolled oats, chopped nuts, almond flour, melted coconut oil, honey (or maple syrup), and a pinch of cinnamon.

                            - Sprinkle this mixture over the top layer of the bars.

                              Bake:

                                - Bake in the preheated oven for 25-30 minutes or until the top is golden brown.
