Beef Short Rib Tacos

2 lbs beef short ribs, bone-in

2 tablespoons olive oil

1 onion, finely chopped

4 cloves garlic, minced

2 cups beef broth

1 cup lager beer (optional)

1 tablespoon chipotle in adobo sauce, minced

2 teaspoons ground cumin

2 teaspoons smoked paprika

1 teaspoon dried oregano

Salt and pepper, to taste

Corn tortillas, for serving

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Sliced radishes (for garnish)

Avocado slices (optional)

Instructions
 

Sear the Short Ribs: In a large Dutch oven or heavy pot, heat olive oil over medium-high heat. Season the beef short ribs with salt and pepper. Sear the ribs on all sides until browned, about 3-4 minutes per side. Remove them from the pot and set aside.

    Sauté Aromatics: In the same pot, add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and sauté for another 1-2 minutes until fragrant.

      Build the Flavor Base: Pour in the beef broth and lager beer (if using) and scrape up any browned bits from the bottom of the pot. Stir in the chipotle in adobo sauce, ground cumin, smoked paprika, and oregano, letting it simmer for a couple of minutes.

        Braise the Ribs: Return the short ribs to the pot, ensuring they are submerged in the liquid. Cover the pot and reduce the heat to low, allowing it to simmer gently for about 3 hours, or until the meat is fork-tender. You can also braise in the oven at 300°F (150°C) for the same amount of time.

          Shred the Meat: Once done, carefully remove the short ribs from the pot and let them cool slightly. Use two forks to shred the meat into bite-sized pieces, discarding the bones and excess fat.

            Reduce the Sauce (Optional): If desired, strain the braising liquid and simmer it on the stovetop until thickened for a richer flavor. Season to taste with salt and pepper.

              Warm the Tortillas: In a dry skillet, heat corn tortillas over medium heat for about 30 seconds on each side, until slightly charred and warm.

                Assemble the Tacos: Fill each warm tortilla with shredded beef short rib. Top with chopped cilantro, sliced radishes, and avocado if using.
