8 oz rice noodles

1 lb beef sirloin, thinly sliced

1 red bell pepper, sliced into strips

1 yellow bell pepper, sliced into strips

1 cup broccoli florets

1 cup snap peas

3 cloves garlic, minced

1 thumb-sized piece of ginger, grated

3 tbsp soy sauce

2 tbsp oyster sauce

1 tbsp sesame oil

1 tbsp vegetable oil

1 tsp cornstarch mixed with 2 tbsp water (for thickening)

Sesame seeds for garnish

Green onions, chopped for garnish

Salt and pepper to taste

Prepare Rice Noodles: Start by boiling water in a large pot. Add the rice noodles and cook according to the package instructions until tender. Drain and rinse under cold water to stop the cooking process. Set aside.

    Marinate the Beef: In a bowl, combine the sliced beef, soy sauce, sesame oil, a pinch of salt, and pepper. Let it marinate for at least 15 minutes while you prepare the veggies.

      Stir-Fry Veggies: Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat. Add the minced garlic and ginger, sauté for about 30 seconds until fragrant.

        Add Vegetables: Toss in the sliced bell peppers, broccoli florets, and snap peas. Stir-fry for about 3-4 minutes, or until the vegetables are vibrant and just tender but still crisp. Remove them from the pan and set aside.

          Cook the Beef: In the same wok, add a little more oil if needed and increase the heat to high. Add the marinated beef, stirring frequently until the beef is browned and cooked through, about 3-5 minutes.

            Combine Ingredients: Return the stir-fried veggies back to the wok with the beef. Pour in the oyster sauce and cornstarch mixture, tossing everything together to coat. Cook for an additional 1-2 minutes until everything is heated through and the sauce has thickened slightly.

              Mix with Noodles: Add the cooked rice noodles to the wok, gently tossing everything together so the noodles soak up the delicious sauce and mix well with the meat and veggies. Adjust seasoning to taste if necessary.

                Serve and Garnish: Plate the stir-fry hot, sprinkled with sesame seeds and chopped green onions for a fresh finish.
