BBQ Chicken Sweet Potato Bowls

1 lb boneless, skinless chicken thighs

1 cup BBQ sauce (store-bought or homemade)

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 cup corn (fresh, canned, or frozen)

1 cup black beans, drained and rinsed

1 avocado, sliced

½ cup red onion, thinly sliced

¼ cup fresh cilantro, chopped

Roast the Sweet Potatoes: Preheat your oven to 425°F (220°C). In a large bowl, toss the diced sweet potatoes with olive oil, smoked paprika, garlic powder, onion powder, salt, and pepper. Spread them out in a single layer on a baking sheet lined with parchment paper. Roast for 25-30 minutes, until they are tender and lightly caramelized.

    Cook the Chicken: While the sweet potatoes are roasting, heat a grill pan or skillet over medium-high heat. Season the chicken thighs with salt and pepper. Add the chicken to the pan and cook for about 5-7 minutes on each side, or until fully cooked and no longer pink in the center.
