BBQ Chicken Sweet Potato Bites

2 large sweet potatoes, peeled and cut into 1-inch cubes

2 cups cooked shredded chicken (preferably rotisserie)

1 cup barbecue sauce (your favorite brand or homemade)

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 cup shredded sharp cheddar cheese

2 green onions, sliced, for topping

Fresh cilantro, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Sweet Potatoes: In a large mixing bowl, toss the sweet potato cubes with olive oil, garlic powder, smoked paprika, salt, and black pepper until evenly coated. Spread the sweet potato cubes in a single layer on a baking sheet lined with parchment paper.

      Roast the Sweet Potatoes: Roast the sweet potatoes in the preheated oven for about 25-30 minutes, or until they are tender and slightly caramelized, stirring halfway through to ensure even cooking.

        Mix Chicken with BBQ Sauce: While the sweet potatoes are roasting, mix the shredded chicken with the barbecue sauce in a separate bowl until fully coated.

          Assemble the Bites: Once the sweet potatoes are done, remove them from the oven. Using a spoon, make small indentations in each sweet potato cube and fill them generously with the BBQ chicken mixture.

            Add Cheese: Sprinkle shredded cheddar cheese over each BBQ chicken-topped sweet potato bite.
