4 medium sweet potatoes

2 cups cooked, shredded chicken (rotisserie chicken works well)

1 cup BBQ sauce (your favorite brand or homemade)

1 cup corn (canned or frozen, thawed)

1/2 cup black beans, rinsed and drained

1/2 cup sharp cheddar cheese, shredded

1/4 cup green onions, sliced

1/4 cup cilantro, chopped (optional)

Salt and pepper, to taste

Instructions
 

Preheat the oven to 425°F (220°C).

    Prepare the sweet potatoes: Wash and dry the sweet potatoes thoroughly. Pierce each potato several times with a fork. Rub them lightly with olive oil and sprinkle with salt.

      Bake the sweet potatoes: Place them on a baking sheet and bake in the preheated oven for about 45-60 minutes, or until they are tender and easily pierced with a fork.

        Make the BBQ chicken filling: In a medium bowl, combine the shredded chicken with the BBQ sauce. Mix well until the chicken is fully coated. Add the corn and black beans, stirring until evenly combined. Season with salt and pepper to taste.

          Assemble the sweet potatoes: Once the sweet potatoes are done baking, remove them from the oven and let them cool for a few minutes. Slice each potato down the center lengthwise, and gently open them up.

            Stuff the sweet potatoes: Spoon the BBQ chicken mixture generously into each sweet potato.

              Add toppings: Sprinkle the shredded cheddar cheese over the stuffed sweet potatoes. Return them to the oven and bake for an additional 10 minutes or until the cheese has melted.
