For the Chicken:

1 lb boneless, skinless chicken thighs

1/2 cup buttermilk

1/2 cup all-purpose flour

1/2 cup cornstarch

1 tsp garlic powder

1 tsp onion powder

1 tsp paprika

Salt and pepper to taste

Oil for frying

For the Bang Bang Sauce:

1/2 cup mayonnaise

2 tbsp sweet chili sauce

1 tbsp sriracha (adjust for spice preference)

1 tsp lime juice

1/2 tsp garlic powder

For the Bowl:

2 cups cooked jasmine rice (or brown rice)

1 cup shredded red cabbage

1 cup cucumber, thinly sliced

1 avocado, sliced

1/4 cup chopped cilantro

Lime wedges for serving

Sesame seeds for garnish

Marinate the Chicken: In a large bowl, combine the buttermilk with salt and pepper. Add the chicken thighs, ensuring they are fully submerged. Cover and marinate in the fridge for at least 30 minutes (or up to 4 hours for more flavor).

    Prepare the Bang Bang Sauce: In a small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, lime juice, and garlic powder until smooth and well combined. Set aside.

      Coat the Chicken: In another bowl, mix the flour, cornstarch, garlic powder, onion powder, paprika, salt, and pepper. Remove the chicken from the marinade and dredge each piece in the flour mixture, ensuring an even coating.

        Fry the Chicken: Heat about 1 inch of oil in a large skillet over medium-high heat. Once the oil is hot (about 375°F), carefully add the coated chicken thighs, cooking in batches if necessary. Fry for 5-7 minutes on each side until golden brown and cooked through. Remove and place on paper towels to drain excess oil.
