Banana Pudding with Vanilla Wafers

1 cup granulated sugar

1/3 cup all-purpose flour

1/4 teaspoon salt

2 3/4 cups whole milk

3 large egg yolks, lightly beaten

2 tablespoons unsalted butter

1 teaspoon pure vanilla extract

4 large ripe bananas, sliced

1 package (11 ounces) vanilla wafers

Whipped cream, for topping

Extra banana slices and vanilla wafers, for garnish

Prepare the Pudding Base:

    In a medium saucepan, whisk together the sugar, flour, and salt. Gradually add the whole milk while stirring to combine. Cook over medium heat, stirring constantly until the mixture begins to thicken and bubble, about 10-12 minutes.

      Add Egg Yolks:

        Temper the egg yolks by slowly adding a few tablespoons of the hot pudding mixture to the yolks while whisking constantly. This prevents the yolks from curdling. Once combined, pour the egg yolk mixture back into the saucepan with the remaining pudding.

          Finish the Pudding:

            Continue to cook for another 2-3 minutes, stirring constantly, until the pudding is thick and coats the back of a spoon. Remove from heat and mix in the unsalted butter and vanilla extract until smooth.

              Layer the Dessert:

                In an 8-inch square or similar-sized dish, spread a layer of vanilla wafers on the bottom. Follow with half of the sliced bananas and pour half of the pudding mixture over the bananas. Repeat the layers with the remaining wafers, bananas, and pudding.

                  Chill:

                    Cover the dish with plastic wrap and refrigerate for at least 4 hours or, preferably, overnight. This allows the flavors to meld and the vanilla wafers to soften.

                      Serve:
