2 boneless, skinless chicken breasts

2 ripe peaches, pitted and sliced

4 cups mixed greens (arugula, spinach, and baby kale work well)

1/2 cup crumbled feta cheese

1/4 cup walnuts, toasted and roughly chopped

1/4 cup balsamic vinegar

2 tablespoons olive oil

1 teaspoon honey

Salt and pepper, to taste

Fresh basil leaves, for garnish (optional)

Prepare the Chicken: Season the chicken breasts with salt and pepper. In a skillet over medium heat, add a tablespoon of olive oil and cook the chicken for about 6-7 minutes on each side, or until fully cooked and juices run clear. Once done, remove the chicken from the skillet and let it rest for about 5 minutes before slicing it into strips.
