4 large Portobello mushroom caps, stems removed

¼ cup balsamic vinegar

3 tablespoons olive oil

2 garlic cloves, minced

1 teaspoon dried thyme

1 teaspoon dried oregano

Salt and pepper to taste

4 whole-grain or brioche burger buns

4 slices fresh mozzarella cheese

1 cup fresh spinach or arugula

1 large tomato, sliced

½ avocado, sliced

Optional: pesto or aioli for spreading

Marinate the Mushrooms: In a shallow dish, whisk together balsamic vinegar, olive oil, minced garlic, dried thyme, dried oregano, salt, and pepper. Add the Portobello caps to the marinade, allowing them to soak for at least 30 minutes, turning occasionally to coat evenly.

    Preheat the Grill: Preheat your grill or grill pan over medium-high heat. If using a grill pan, lightly oil it to prevent sticking.

      Grill the Mushrooms: Remove the mushrooms from the marinade, allowing the excess to drip off. Place them on the grill, gill-side down. Grill for about 5-6 minutes, then flip and grill for another 5 minutes, until tender and infused with smoky flavor. In the last minute of grilling, add a slice of mozzarella on top of each mushroom cap to melt.

        Toast the Buns: While the mushrooms are grilling, slice the buns in half and toast them on the grill for a couple of minutes until golden brown and slightly crispy.
