3 medium zucchinis, thinly sliced

3 large ripe tomatoes, thinly sliced

1 cup grated mozzarella cheese

1/2 cup grated Parmesan cheese

1/2 cup breadcrumbs (preferably whole wheat)

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper, to taste

Fresh basil leaves for garnish

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Vegetables: In a large bowl, combine the sliced zucchinis and tomatoes. Sprinkle with salt and pepper, then set aside for about 10 minutes to let the vegetables release some moisture.

      Make the Garlic Oil: In a small skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant. Remove from heat.

        Layer the Gratin: In a greased baking dish, start layering the sliced zucchini and tomato. Alternate layers of zucchini and tomatoes, slightly overlapping them.

          Season the Layers: Drizzle the garlic oil over the layered vegetables. Sprinkle with dried oregano and basil, ensuring even coverage.

            Add Cheese: Evenly distribute half of the mozzarella cheese over the layered vegetables. Then, add another layer of zucchini and tomatoes before sprinkling the remaining mozzarella on top.
