Ingredients

For the Meatballs:

1 lb ground chicken or turkey

1 cup fresh peaches, diced (about 2 medium peaches)

1/2 cup breadcrumbs (preferably panko)

1/4 cup grated Parmesan cheese

1/4 cup finely chopped onion

2 cloves garlic, minced

1 large egg

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon dried thyme

1 teaspoon smoked paprika

For the Glaze:

1/2 cup peach preserves

2 tablespoons soy sauce

1 tablespoon apple cider vinegar

1 teaspoon fresh ginger, grated

1/2 teaspoon red pepper flakes (optional, for a bit of heat)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.

Prepare the Meatball Mixture: In a large mixing bowl, combine the ground chicken or turkey with the diced peaches, breadcrumbs, Parmesan, onion, garlic, egg, salt, pepper, thyme, and smoked paprika. Use your hands to mix everything until just combined, being careful not to overmix.

Shape the Meatballs: Using a cookie scoop or your hands, form the mixture into meatballs, about 1 to 1.5 inches in diameter. Place them evenly spaced on the prepared baking sheet.

Make the Glaze: In a small bowl, whisk together the peach preserves, soy sauce, apple cider vinegar, grated ginger, and red pepper flakes until smooth.

Glaze the Meatballs: Brush or spoon the glaze over each meatball, making sure they're well-coated.

Bake: Bake the meatballs in the preheated oven for 20-25 minutes or until they are cooked through (internal temperature should reach 165°F or 74°C) and lightly caramelized on top.

Serve: Remove from the oven and let them rest for a few minutes before serving. These baked peach meatballs pair beautifully with a side of rice, quinoa, or a fresh salad.
