Baked Feta Potatoes

4 medium-sized Yukon Gold potatoes

200g block of feta cheese

2 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 teaspoon sea salt

1/2 teaspoon black pepper

1 cup cherry tomatoes, halved

1/4 cup fresh basil leaves or parsley for garnish

Optional: Red pepper flakes for a spicy kick

Instructions
 

Preheat the oven: Preheat your oven to 400°F (200°C).

    Prepare the potatoes: Scrub the potatoes clean and prick them several times with a fork. This allows steam to escape during baking. Place them directly on the oven rack and bake for about 45-60 minutes, or until they are tender when pierced with a fork.

      Prepare the feta: While the potatoes are baking, take a medium-sized baking dish and drizzle 1 tablespoon of olive oil. Place the block of feta cheese in the center of the dish.

        Season the feta: Sprinkle the dried oregano, garlic powder, smoked paprika, sea salt, and black pepper evenly over the feta cheese.

          Add the tomatoes: Scatter the halved cherry tomatoes around the feta in the baking dish. Drizzle the remaining tablespoon of olive oil over the tomatoes.

            Bake the feta: Once the potatoes are done, remove them from the oven and carefully cut them in half lengthwise. Gently mash the insides with a fork to create a small well.

              Combine and bake: Return the baking dish with the feta and tomatoes to the oven and bake for an additional 25 minutes, until the feta is golden and soft and the tomatoes are blistering.

                Assemble the dish: Once everything is baked, take it out of the oven. Spoon the roasted tomatoes and melted feta over the mashed potato halves, allowing some of the feta to mix into the potato for creaminess.

                  Garnish: Top with fresh basil or parsley leaves, and sprinkle with red pepper flakes if you like a little heat. Serve immediately while warm and enjoy!
