200g (7 oz) cherry tomatoes, halved

200g (7 oz) block of feta cheese

3 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional, for a kick)

Salt and pepper to taste

300g (10.5 oz) pasta of choice (penne or fusilli work great)

Fresh basil, for garnish

Grated parmesan cheese, for serving

Preheat the Oven: Preheat your oven to 200°C (400°F).

    Prepare the Baking Dish: In a baking dish, combine the halved cherry tomatoes, feta cheese, minced garlic, dried oregano, red pepper flakes (if using), and olive oil. Season generously with salt and pepper, then gently toss everything together to coat the feta and tomatoes in the oil and seasonings.

      Bake the Feta and Tomatoes: Place the baking dish in the preheated oven and bake for about 30-35 minutes, or until the tomatoes are burst and caramelized, and the feta is golden and slightly softened.

        Cook the Pasta: While the feta and tomatoes bake, bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain the pasta.

          Combine Pasta and Sauce: Once the feta and tomatoes are out of the oven, use a fork to mash the feta and mix it together with the tomatoes and garlic, creating a creamy sauce. If the mixture is too thick, gradually stir in some reserved pasta water until you achieve your desired consistency.
