Baked Fajita Chicken Nachos

2 cups cooked chicken, shredded

1 tablespoon olive oil

1 red bell pepper, sliced

1 green bell pepper, sliced

1 medium onion, sliced

1 tablespoon taco seasoning

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon cayenne pepper (optional)

8 ounces tortilla chips

2 cups shredded cheddar cheese

1 cup black beans, drained and rinsed

1 jalapeño, sliced (optional)

1/2 cup pico de gallo

1/4 cup chopped fresh cilantro

1/4 cup sour cream (for serving)

1 avocado, diced (for serving)

Lime wedges (for serving)

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C).

    Sauté the Veggies: In a large skillet, heat the olive oil over medium heat. Add the sliced red and green bell peppers and onion. Sauté for about 5-7 minutes until the vegetables are softened and slightly caramelized.

      Season the Chicken: Stir in the shredded chicken, taco seasoning, garlic powder, onion powder, and cayenne pepper (if using). Cook for an additional 2-3 minutes until the chicken is heated through and coated with spices. Remove from heat.

        Assemble the Nachos: On a large baking sheet, spread half of the tortilla chips in an even layer. Top with half of the sautéed chicken and veggie mixture, half of the black beans, and half of the shredded cheddar cheese. Repeat the layers with the remaining chips, chicken, black beans, and cheese.

          Bake: Place the nachos in the preheated oven and bake for 10-12 minutes, or until the cheese is melted and bubbly.

            Add Toppings: Remove from the oven and add sliced jalapeño (if desired), pico de gallo, and fresh cilantro on top of the baked nachos.

              Serve: Serve hot with a dollop of sour cream and diced avocado on the side, along with lime wedges for squeezing over the nachos.
