6 large eggs

1 cup baby spinach, chopped

1/2 cup cherry tomatoes, halved

1/2 cup shredded cheese (cheddar or feta work great)

1/4 cup cooked ham or bacon, diced (optional)

Salt and pepper, to taste

1 teaspoon olive oil

Fresh herbs (like chives or parsley) for garnish

Instructions
 

Preheat your oven to 375°F (190°C). Grease a muffin tin with olive oil or use cooking spray to prevent sticking.

    In a mixing bowl, whisk together the eggs, salt, and pepper until well combined.

      Stir in the chopped spinach, halved cherry tomatoes, shredded cheese, and diced ham or bacon (if using) into the egg mixture.

        Pour the egg mixture evenly into the prepared muffin tin, filling each cup about 3/4 full to allow for rising.

          Bake in the preheated oven for 18-20 minutes, or until the egg cups are fully set and the tops are slightly golden.

            Remove the muffin tin from the oven and allow the egg cups to cool for a few minutes. Carefully run a knife around the edges to loosen and gently remove each cup from the tin.

              Garnish with fresh herbs before serving for a pop of color and flavor.
