Baked Chicken Parmesan Stuffed Shells

20 large pasta shells

2 cups cooked chicken, shredded (rotisserie chicken works great)

1 cup ricotta cheese

1 cup shredded mozzarella cheese, divided

1/2 cup grated Parmesan cheese

1 cup marinara sauce, plus more for topping

1 large egg

1 teaspoon garlic powder

1 teaspoon Italian seasoning

Salt and pepper, to taste

Fresh basil or parsley for garnish (optional)

Instructions
 

Preheat the oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish with cooking spray or olive oil.

    Cook the pasta shells: Bring a large pot of salted water to a boil. Add the pasta shells and cook according to package instructions until al dente. Drain and set aside to cool slightly.

      Prepare the filling: In a large mixing bowl, combine the shredded chicken, ricotta cheese, 1/2 cup of mozzarella cheese, Parmesan cheese, egg, garlic powder, Italian seasoning, salt, and pepper. Mix well until all ingredients are fully incorporated.

        Stuff the shells: Take each cooked pasta shell and fill it generously with the chicken mixture, placing it in the prepared baking dish with the opening facing up. Repeat until all shells are filled.

          Add sauce and cheese: Pour marinara sauce evenly over the stuffed shells, ensuring they are adequately covered. Sprinkle the remaining 1/2 cup of mozzarella cheese on top.

            Bake the shells: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 15 minutes, or until the cheese is melted and bubbly and the top is lightly golden.
