Baked Chicken Parmesan Meatballs

1 lb ground chicken

1 cup breadcrumbs (preferably Italian seasoned)

1/2 cup grated Parmesan cheese

1/2 cup shredded mozzarella cheese

1/4 cup fresh parsley, chopped (or 2 tablespoons dried parsley)

2 cloves garlic, minced

1 large egg

1 tsp dried oregano

1/2 tsp red pepper flakes (optional for heat)

Salt and pepper to taste

1 jar (24 oz) marinara sauce

Extra Parmesan cheese for topping

Fresh basil (optional, for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it.

    Mix the Meatball Mixture: In a large mixing bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, mozzarella cheese, parsley, minced garlic, egg, oregano, red pepper flakes, salt, and pepper. Mix until just combined; do not overmix to keep the meatballs tender.

      Form the Meatballs: Using your hands, form the mixture into meatballs about 1 to 1.5 inches in diameter. Place them on the prepared baking sheet, spaced evenly apart.

        Bake the Meatballs: Bake the meatballs in the preheated oven for 20-25 minutes or until they reach an internal temperature of 165°F (74°C) and are golden brown on the outside.

          Prepare the Marinara Sauce: While the meatballs are baking, heat the marinara sauce in a saucepan over medium heat until warmed through. Taste and adjust seasoning if necessary.

            Combine Meatballs and Sauce: Once the meatballs are fully cooked, remove them from the oven and carefully arrange them in a large baking dish. Pour the marinara sauce over the meatballs, ensuring they are well-coated.

              Top with Cheese: Sprinkle extra grated Parmesan cheese and additional mozzarella cheese on top of the meatballs.

                Finish Baking: Return the dish to the oven and bake for an additional 10-15 minutes, until the cheese is bubbling and golden.

                  Serve: Remove from the oven and allow to cool for a couple of minutes. Garnish with fresh basil if desired. Serve the meatballs over spaghetti, in a sub roll, or as an appetizer with toothpicks!
