2 boneless, skinless chicken breasts, cut into strips

1 red bell pepper, sliced

1 green bell pepper, sliced

1 yellow onion, sliced

3 tablespoons olive oil

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon salt

½ teaspoon black pepper

4 large flour tortillas

1 cup shredded cheese (cheddar, Monterey Jack, or a blend)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Chicken Mixture: In a large bowl, combine the chicken strips, sliced bell peppers, and onion. In a small bowl, whisk together the olive oil, chili powder, cumin, paprika, garlic powder, onion powder, salt, and black pepper. Pour the spice mixture over the chicken and veggies, and toss to coat evenly.

      Assemble the Foil Packs: Tear off four large pieces of aluminum foil (about 12x18 inches each). Place an equal amount of the chicken and vegetable mixture onto the center of each piece of foil.

        Add Cheese and Fold: Sprinkle about a quarter cup of shredded cheese over each chicken and veggie pile. Fold the sides of the foil over the mixture and then fold the ends to create a sealed packet. Make sure they are tightly closed to trap in steam.

          Bake: Place the foil packs on a baking sheet and bake in the preheated oven for 25-30 minutes, or until the chicken is fully cooked and reaches an internal temperature of 165°F (74°C).

            Serve: Carefully open the foil packs (watching out for hot steam!), and serve directly in the foil or transfer to plates. Garnish with fresh cilantro and lime wedges for added flavor. You can serve with extra tortillas for wrapping.
