1 lb (450g) boneless, skinless chicken breasts, cut into strips

2 tablespoons olive oil

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 red bell pepper, sliced

1 green bell pepper, sliced

1 medium onion, sliced

1 cup cooked brown rice or quinoa

1 cup black beans, drained and rinsed

1 cup corn (fresh, frozen, or canned)

1 cup shredded cheese (cheddar or Mexican blend)

1 avocado, sliced (for topping)

Fresh cilantro (for garnish)

Lime wedges (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Chicken: In a large bowl, combine the olive oil, chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and black pepper. Add the chicken strips and toss until well-coated.

      Add Vegetables: Add the sliced bell peppers and onion to the bowl with the chicken. Toss everything together to ensure the vegetables are evenly coated in the spice mixture.

        Bake the Chicken and Vegetables: Spread the chicken and vegetable mixture in a single layer on a large baking sheet lined with parchment paper. Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender.

          Prepare the Base: While the chicken and vegetables are baking, prepare your rice or quinoa according to package instructions.

            Assemble the Bowls: Once the chicken and vegetables are done baking, remove them from the oven. In individual bowls, layer the cooked rice or quinoa at the bottom, followed by a scoop of black beans, corn, and the baked chicken and vegetable mixture.

              Add the Cheese: Sprinkle shredded cheese on top of each bowl, and return the bowls to the oven for about 5 minutes, just until the cheese melts.

                Garnish and Serve: Remove from the oven and top with sliced avocado, fresh cilantro, and lime wedges. Serve immediately and enjoy!
