Ingredients

1 large flatbread (store-bought or homemade)

8 oz Brie cheese, cut into slices

2 ripe pears, cored and thinly sliced

2 tablespoons unsalted butter

2 tablespoons brown sugar

1 teaspoon vanilla extract

1 teaspoon fresh thyme leaves (plus extra for garnish)

Salt and pepper, to taste

¼ cup walnuts, chopped (optional)

Honey, for drizzling

Arugula or mixed greens, for serving (optional)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Caramelize the Pears: In a skillet over medium heat, melt the unsalted butter. Add the sliced pears, brown sugar, and vanilla extract. Stir well to coat the pears and cook for about 5-7 minutes, stirring occasionally, until the pears are tender and caramelized. Season with a pinch of salt and pepper, and stir in fresh thyme leaves. Remove from heat.

Prepare the Flatbread: On a baking sheet, place the flatbread. Lay the slices of Brie cheese evenly across the flatbread, leaving a little space between each slice for even melting.

Top with Caramelized Pears: Evenly distribute the caramelized pears over the Brie on the flatbread. If using, sprinkle chopped walnuts over the top for added crunch.

Bake: Place the flatbread in the preheated oven and bake for about 10-12 minutes, or until the Brie is melty and the edges of the flatbread are golden brown.

Garnish: Once baked, remove the flatbread from the oven. Drizzle lightly with honey and garnish with additional fresh thyme leaves. If desired, serve with a handful of arugula or mixed greens on the side for a fresh contrast.

Slice and Serve: Allow the flatbread to cool for a minute before slicing into pieces. Serve warm and enjoy!
