For the Chicken Marinade:

1 lb boneless, skinless chicken breasts

2 tbsp olive oil

Juice of 2 limes

1 tsp cumin

1 tsp smoked paprika

1 tsp garlic powder

1 tsp onion powder

Salt and pepper to taste

For the Rice:

1 cup jasmine or brown rice

2 cups chicken broth (or water)

Zest of 1 lime

1 tbsp chopped fresh cilantro

For the Toppings:

1 cup canned black beans, drained and rinsed

1 cup corn (fresh, canned, or frozen)

1 avocado, diced

1 cup cherry tomatoes, halved

1/2 cup red onion, diced

1/2 cup crumbled feta cheese (optional)

1/4 cup fresh cilantro, chopped

Lime wedges for serving

Hot sauce (optional)

Instructions
 

Marinate the Chicken: In a medium bowl, whisk together olive oil, lime juice, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper. Add the chicken breasts and coat well. Let marinate for at least 30 minutes (or up to 2 hours in the fridge).

    Cook the Rice: In a medium saucepan, bring chicken broth to a boil. Stir in rice and lime zest. Reduce heat to low, cover, and simmer for 18-20 minutes (or according to rice package instructions) until rice is tender and liquid is absorbed. Fluff with a fork and stir in cilantro.

      Cook the Chicken: Preheat a grill or grill pan over medium-high heat. Remove chicken from marinade and grill for 6-7 minutes per side, or until the internal temperature reaches 165°F (74°C). Remove from the grill and let rest for 5 minutes before slicing.

        Prepare the Toppings: While the chicken is resting, prepare your toppings. In individual bowls, arrange black beans, corn, avocado, cherry tomatoes, red onion, and feta cheese.

          Assemble the Bowls: In serving bowls, layer the cooked rice, topped with sliced grilled chicken, and arrange the toppings over the rice. Garnish with fresh cilantro and serve with lime wedges and hot sauce if desired.
