4 large whole wheat tortillas

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 cup cooked chicken, diced (or black beans for a vegetarian option)

1/2 cup bell peppers, diced (any color)

1/2 cup corn kernels (fresh or frozen)

1/4 cup red onion, finely chopped

1 teaspoon taco seasoning

1/2 teaspoon garlic powder

1/2 teaspoon cumin

2 tablespoons olive oil (for cooking)

Salsa, guacamole, or sour cream (for serving)

Instructions
 

Prep the Filling: In a mixing bowl, combine the diced chicken (or black beans), bell peppers, corn, red onion, taco seasoning, garlic powder, and cumin. Mix until evenly combined.

    Layer the Cheese: Place a tortilla on a flat surface. Sprinkle a layer of shredded cheddar and mozzarella cheese on half of the tortilla.

      Add the Filling: Spoon a generous amount of the filling mixture on top of the cheese layer. Make sure to leave some space around the edges to avoid overfilling.

        Top it Off: Sprinkle another layer of cheese on top of the filling for extra melty goodness. Fold the tortilla over to create a half-moon shape.

          Cook the Quesadilla: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Once hot, carefully place the folded quesadilla in the skillet. Cook for about 3-4 minutes on one side until golden brown and crispy.

            Flip and Finish: Carefully flip the quesadilla using a spatula. Add the remaining tablespoon of olive oil if needed and cook for another 3-4 minutes until both sides are crispy and the cheese is melted.
