Ingredients

1 ½ cups all-purpose flour

½ cup grated cheddar cheese

½ cup diced ham ( cooked and chilled)

1 tablespoon baking powder

½ teaspoon baking soda

½ teaspoon garlic powder

½ teaspoon onion powder

¼ teaspoon black pepper

1 cup buttermilk (or milk + 1 tablespoon vinegar)

1 large egg

¼ cup melted butter (cooled)

2 tablespoons fresh chives (chopped, optional)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a muffin tin with paper liners or grease it with cooking spray.

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, grated cheddar cheese, diced ham, baking powder, baking soda, garlic powder, onion powder, and black pepper until fully combined.

Combine Wet Ingredients: In a separate bowl, mix the buttermilk, egg, and melted butter until smooth. If you’re using vinegar to sour your milk, combine it with the milk and let it sit for about 5 minutes before mixing with the other wet ingredients.

Combine Mixes: Pour the wet mixture into the dry ingredients. Gently fold the mixture until just combined, being careful not to overmix. If desired, add the chopped chives for extra flavor.

Fill Muffin Tin: Evenly distribute the batter into the prepared muffin tin, filling each cup about ¾ full.

Bake: Bake in the preheated oven for 15-20 minutes or until the muffins are golden brown and a toothpick inserted into the center comes out clean.

Cool: Allow the muffins to cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.

Serve: Enjoy these savory muffins warm, or store them in an airtight container for a perfect grab-and-go snack for school lunches or breakfast!
