1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper (any color), diced

1 cup zucchini, diced

1 cup cherry tomatoes, halved

1 cup corn (fresh or frozen)

1 teaspoon paprika

1 teaspoon Italian seasoning

Salt and black pepper to taste

¼ cup chicken broth

½ cup shredded mozzarella cheese

Fresh parsley, chopped for garnish

Sauté Chicken: In a large skillet, heat the olive oil over medium heat. Add the cubed chicken breast, season with salt, pepper, and paprika. Cook for about 5-7 minutes, or until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside.
